I love curry because of several reasons: 1st. it is always tasty, 2nd. you can vary the spices, 3rd. it is a fast dish and 4th. you only need one pot, so it is little to clean off ;)
Curry is also great for the leftover. simply cut your leftover vegetables and meat, fry them make a sauce, and call it curry ... in my opinion it sounds much better than "stew".
Here is my recipe for a spicy orange curry:
1 clove of garlic
1/2 yellow peppers
1/2 red peppers
200ml chicken broth
1 tablespoon Tandori spice mixture
1 tablespoon spicy Curry
Ginger to taste
Preparation:Chop the chicken, peppers, carrots, onion, garlic and ginger. In a little oil fry the spices, the onion, garlic and ginger, then add the meat and also fry briefly. Then add the peppers and the carrots and pour in the chicken broth. Let it simmer as long as the vegetables are soft and the meat ready. Add the sauce thickener.
I had my curry with quinoa, but it rice would be great too. You can add some chickpeas to the curry.
