Gebratene Forelle mit Gewürzkartoffeln / Roasted trout with spiced potatoes

Schon als Kind habe ich total gerne Fisch, vor allem Forelle gegessen. Fisch ist aber nicht gleich Fisch. Fast alle Gewässer sind überfischt und man hört immer wieder, dass im Wasser Antibiotika, Quecksilber, Hormone usw. sind. Andererseits haben Fische viele gesunde Omega 3 Fettsäuren und sind eine extrem gesunde Eiweißquelle. Achtet bei eurem Fischkauf auf jeden Fall woher er kommt und ob er z.B. MSC-Zertifiziert ist.
Wir haben unseren Fisch von einem lokalem Fischverkäufer geholt. Er ist bis vor seinem Fang noch im tiroler Bergquellwasser geschwommen und hat wahnsinnig gut geschmeckt. Unter einem Foto weiter unten könnt ihr sehen woran man ganz einfach erkennen kann, dass der Fisch auch wirklich frisch ist. Ich habe immer etwas Respekt vor der Zubereitung von Fisch, aber eigentlich geht es super einfach.


Zutaten für eine Person:

1 Forelle
1 Scheibe Zitrone
Petersilie
Rosmarin
1 kleine Zehe Knoblauch
etwas Mehl
Salz, Pfeffer

Gewürzkartoffeln:

2 Kartoffeln
Koreandersamen, Kümmel, Lorbeer, Meersalz


Zubereitung:

Kartoffeln mit den Gewürzen ganz normal in Salzwasser kochen.
Die Forelle waschen, mit Petersilie, Rosmarin, Zitrone, Knoblauch füllen. Die Hautseite mit Salz, Pfeffer würzen und bemehlen (dann wird die Haut schön knusprig).
Den Fisch in einer Pfanne kurz anbraten, danach in eine Alufolie packen und bei 200° 20min. ins Backrohr geben.

Der gefüllte Fisch / the filled fish
Even as a child I loved to eat fish, especially trout. But not all fish is alike. You often hear that the seas are overfished and you always hear that antibiotics, mercury, hormones, etc. are in the water,. On the other hand, fish contains healthy omega-3 fatty acids and is an extremely healthy source of protein. So pleas make sure where your fish comes form and if it has for example a MSC- certificate.
We got our fish from a local fish seller. Right before its catch it swam in our  tyrolean mountain spring water and it tasted insanely good. Under a photo below you can see what one can easily see that the fish is really fresh. I always have some respect for the preparation of fish, but actually it is super easy.



Ingredients for a person:

1 trout
1 slice of lemon
parsley
rosemary
1 small clove garlic
some flour
Salt and pepper

Spice potatoes:

2 potatoes
Coriander seeds, caraway, bay leaf, sea salt

Preparation:

Boil the potatoes with spices salted water.
Wash the trout, fill with them with parsley, rosemary, lemon, garlic. Season the skin with salt and pepper and put the trout into flour (then the skin got nice and crispy).
Fry the fish in a pan briefly, then pack them in aluminum foil and put it in the oven at 200°  for 20min. 

Frischen Fisch erkennt man an den schön roten Kiemen, glasigen Augen und dass er schön fest ist (also wenn man drauf drückt muss die Delle gleich zurück gehen). Außerdem darf er nicht nach Fisch riechen und es kann eine schleimige Schicht rund um den Fisch sein.
You see if the fish is fresh when it has beautiful red gills, glazed eyes and it is nice and firm (so if you press it it should bounce back immediately). It also must not smell fishy and it can have a slimy layer around it.
