Chia Samen / Chia Seeds

Warum sollte man Chia Samen essen?

Chia Samen enthalten sehr viel Eiweiß (ca. doppelt so viel wie andere Getreidesorten) und gesunde Omega 3 und 6 Fettsäuren. Sie haben ca. 5x so viel Calcium wie Milch und das Spurenelement Bor (wichtig für die Calcium Aufnahme). Außerdem haben Chia Samen viel Kalium und Eisen. Chia Samen wirken positiv auf die Verdauung und Sättigen sehr lange. Sie wirken sich positiv auf den Blutzuckerspiegel aus. Sie schaffen eine Barriere zwischen Kohlehydraten und Verdauungsenzyme, dadurch wird die Aufnahme Kohlehydraten in Zucker verlangsamt. Das hat zur Folge, dass die Energie der Nahrung langsamer im Körper freigesetzt wird, was zu einer längeren Ausdauer führt. Das ist vor allem für Sportler aber auch Diabetiker super.



Why should you eat chia seeds?

Chia seeds contain a lot of protein (about twice as much as other cereals) and healthy omega 3 and 6 fatty acids. They also have about 5 times as much calcium as milk and the trace element boron (important for calcium absorption). Moreover, Chia seeds have a lot of potassium and iron. Chia seeds have a positive effect on the digestion and very long saturating. They also have a positive effect on blood sugar levels. They create a barrier between carbs and digestive enzymes, thereby recording carbs is slowed in sugar. This has the consequence that the energy of the food is released slowly in the body, leading to a longer endurance. This is good for sportsmen but also for diabetics.

geröstete Kichererbsen / Roasted Chickpeas

Es gibt unzählige Möglichkeiten Kichererbsen zuzubereiten, eine sehr gute Variante sind geröstete Kichererbsen als gesunde Snack Idee. Perfekt zu einem Glas Wein, um sie vor dem Fernseher zu knabbern oder um sie zur Uni/Arbeit/Schule mitzunehmen. In diesem Blogpost stelle ich euch wieder das Grundrezept und Abwandlungen vor. Wie immer sind eurer Kreativität aber keine Grenzen gesetzt. 


Zutaten:

1 Dose Kichererbsen
1 EL neutrales ÖL
Gewürze eurer Wahl

Zubereitung:

Die Kichererbsen mit einem Küchentuch gut trocken. Dabei löst sich die äußerstes Schale. Tut euch die Mühe an und schält wirklich alle Kichererbsen. Die getrockneten, geschälten Kichererbsen mit dem Esslöffel Öl mischen und auf ein Backblech legen. Bei 180° ca 20-30 min backen, bis die Erbsen knusprig sind. Im noch warmen Zustand würzen. Das könnt ihr pikant oder süß machen. Pikant mit Knoblauch, Curry, Kumin, Kräutern, Käse,... Süß mit Honig, Zimt, Vanille,...

Warum sollte man Kichererbsen essen?

Schon eine Portion gekochter Kichererbsen (ca. 165g) deckt: 
70% des tägl. Folsäurebedarfs
65% des tägl. Kupferbedarfs
50% des tägl. Ballaststoffbedarfs
25% des tägl. Eisenbedarfs
20% des tägl. Zinkbededarfs
Kichererbsen haben einen niedrigen glykämischen Index (GI) und gemäßigte Kalorienmenge. Sie sind gleichzeitig sehr sättigend und vor allem für Sportler, Vegetarier und Veganer eine super Proteinquelle.

Kichererbsen mit Honig und Zimt: Die Kichererbsen nach 20min mit Honig und Zimt mischen und nochmal 10min im Backofen karamellisieren lassen.
Chickpeas with honey and cinnamon: Mix the chickpeas after 20 minutes in the oven with honey and cinnamon and let them caramelize in the oven again for 10 minutes.

There are countless ways to prepare chickpeas, a very good option is roasted chickpeas as a healthy snack idea. Perfect to  a lass of wine, to nibble in front of the TV, or to bring  it to uni / work / school. In this blog post I present to you  the basic recipe and variations. As always, there are no limits for your creativity.

Ingredients:

1 can of chickpeas
1 tablespoon neutral oil
Spices of your choice

Preparation:

Dry the chickpeas with a kitchen towel. Here, the outermost shell dissolves. Peel all chickpeas. Mix the dried, shelled chickpeas with the tablespoon of oil and place them on a baking sheet. Roast the peas at 180 ° 20-30 min until the peas are crisp. Season them while they are still warm. You can season them sweet or salty: Salty with garlic, curry, cumin, herbs, cheese, ... Sweet with honey, cinnamon, vanilla, ...

Why should you eat chickpeas?

Already a serving of cooked chickpeas (about 165 g) covers:
70% of the daily Folic acid needs
65% of the daily Copper needs
50% of the daily Fiber needs
25% of the daily Iron needs
20% of the daily Zinc needs
Chickpeas have a low glycemic index (GI) and moderate amount of calories. They are also very filling and especially for athletes, vegetarians and vegans a great source of protein.

In addition, chickpeas have a positive effect on the digestion, they act as antioxidants and have a positive effect on the cardiovascular system.

Kichererbsen mit Knoblauch und Kräutern: Ich habe frische Petersilie, Rosmarin, Oregano mit Knoblauch und Kräutersalz gemischt und mit den warmen Kichererbsen gemischt.

Zitronen Rosmarin Limo - Lemon rosmary limonade


Endlich Sommer, zumindest bei uns. Trinken ist ja generell sehr wichtig, nur leider hab ich große Probleme damit. Ich trinke viel zu wenig, aber bemühe mich ständig das zu ändern. Ich versuche vor allem viel Wasser zu trinken, aber manchmal brauche ich einfach etwas mit Geschmack.
Darum: mein Rezept für eine Zitronen-Rosmarin-Limo. Das ist wirklich total erfrischend und perfekt für warme Sommertage. Ich habe gleich mehr gemacht, sie hält super im Kühlschrank (naja...bei uns ist sie dann immer recht schnell weg.) :)


Zutaten:
1,5l Mineralwasser (oder normales, je nach dem was man mag)
150ml Zitronensaft
2El Zucker 
Rosmarin Nadeln

Zubereitung:
Zucker in einem Topf schmelzen lassen und mit dem Zitronensaft ablöschen. Die Rosmarinnadeln dazu geben und etwas köcheln lassen. Die fertige Flüssigkeit auskühlen lassen und mit dem Mineralwasser aufspritzen. 


Summer is coming, at least to us. Indeed, drinking is generally very important, but unfortunately I have big problems with it. I drink too less, but am trying to change it. I try to drink especially plenty of water but sometimes I just need something with taste.
Therefore my recipe for a lemon-rosemary lemonade. This is really  refreshing and perfect for warm summer days. I made 1,5 liter, if it is to much but it in the fridge. I'm sure it will not stay there very long ;)

Ingredients:

1.5 l of mineral water (or normal water, whatever you like)
150ml lemon juice
2tbsp sugar
rosemary needles

Preparation:

Melt the sugar in a saucepan and add the lemon juice. Add the rosemary needles and simmer it. Leave it to cool the finished liquid and fill it up with mineral water.

Veganes Schokomousse mit Cashewnüssen / Vegan Chocolate Mousse with Cashew Nuts

Kein neues Rezept, auch nicht wirklich von mir erfunden nur etwas umgewandelt. Es schmeckt aber so gut, dass ich es euch zeigen wollte.  Außerdem ist es gesund und schnell gemacht. Dass ich Avocado liebe wisst ihr ja vielleicht inzwischen. Auch die süße Variante schmeckt sehr gut. 
Vegan, Gluten frei und Low Carb.


Zutaten:

1 reife Avocado
1,5 EL ungesüßter Kakao
1 EL zerbröselte Cashew Nüsse

Süßstoff nach belieben
Aladins Kaffeegewürz von Sonnentor

Zubereitung:

Die zerdrückte Avocado mit den restlichen Zutaten mischen.



Not a new recipe, not really invented by me, I just changed something. But it tastes so good that's why I wanted to show it to you. It is also healthy and very quick.  Maybe you already know that I love avocado. I also like the sweet version very much.
Vegan, gluten-free, low carb.

Ingredients:

1 ripe avocado
1.5 tablespoons unsweetened cocoa
1 tablespoon crumbled cashew nuts
Sweetener of choice
Aladdin coffee spice of Sonnentor

Preparation:

Mix the mashed avocado with the remaining ingredients.

Quinoa Salat /quinoa salad

Sommer ist Salat Zeit. Ich liebe Salat einfach. Es gibt so viele Variationen und es ist ideal um Dinge wie Gemüse, Reis, Nudeln, Quinoa, Couscous... aufzubrauchen. :)  Außerdem kann man Salat auch immer super mitnehmen. Meist fülle ich dazu das Dressing in ein extra Glas und in der Arbeit/Uni mische ich erst alles zusammen. Heute möchte ich euch meine Variante von einem Quinoa-Salat vorstellen. Natürlich kann man die Zutaten wieder so variieren wie es einem selber schmeckt. 


Zutaten für eine Person:

100g Quinoa gekocht
1/2 geriebene Karotte 
1/2 geriebene Zucchini 
1 Schalotte/kleine Zwiebel
1 Tomate
50g gebratene Süßkartoffel

Dressing:
2EL Olivenöl
4EL weißer Balsamico Essig
1TL Honig
1TL Senf
Salz, Pfeffer

Zubereitung:

Die Zutaten für den Salat einfach zusammen mischen.
Die Zutaten für das Dressing zusammen mischen und über den Salat geben.
Natürlich kann man auch Fleisch dazu geben oder Feta, oder Mozzarella, Nüsse,...alles was man mag. 

Warum sollte man Quinoa essen?

Quinoa hat viele hochwertige Proteine und essentielle Aminosäuren z.B. Lysin. Lysin kommt sonst vor allem in Fleisch und Fisch vor. Daher ist es vor allem für Veganer und Vegetarier ratsam öfter mal Quinoa zu essen. Außerdem hat Quinoa viel Eisen, Magnesium und Kalzium. Gut für den Cholesterinspiegel bzw. Herz/Kreislauf sind die enthaltenen Omega-3-Fettsäuren. Außerdem enthält Quinoa viele Ballaststoffe, was für die Verdauung gut ist.

Summer is salad time. I love salad. There are so many variations and it is the best things if you have to use your left over vegetables, rice, pasta, quinoa, couscous ... :) You can also prepare a salad and bring it to work/university/school. I usually fill up the dressing in a separate glass and  mix everything together at lunch time. Today I want to introduce to you my version of a quinoa salad. Of course you can vary the ingredients to your taste.

Ingredients for a person:

100 g cooked quinoa
1/2 grated carrot
1/2 grated zucchini
1 shalotte / small onion
1 tomato
50g roasted sweet potato

Dressing:
2 tablespoon olive oil
4tablespoon white balsamic vinegar
1 teaspoon honey
1 teaspoon mustard
Salt Pepper

Preparation:

Mix the ingredients for the salad together.
Mix the ingredients for the dressing together and pour it over the salad.
Of corse you can add meat, feta, mozzarella, nuts... everything you like. :)

Why should you eat quinoa?

Quinoa has a lot of high quality protein and essential amino acids such as Lysine. Lysine is mainly in meat and fish. Therefore, it is especially good for vegans and vegetarians to eat quinoa. In addition, quinoa has a lot of iron, magnesium and calcium. Good for cholesterol or heart / circulation are the contained omega-3 fatty acids. In addition, quinoa contains a lot of fiber, which is good for digestion.

Apfelradl / "Apfelradl"

Ich habe mich schon länger gefragt, ob es sich lohnt auch auf Englisch zu bloggen und habe mir aus diesem Grund die Statistiken angeschaut. Es freut mich sehr, dass ich die zweit meisten likes aus Uk bekommen habt. Bei meinen Blog-Lesern sind USA, UK, Kanada und Irland auf den Plätzen 3-6 *freu*.
Aus diesem Grund möchte ich euch ein (für mich) typisch österreichisches Gericht vorstellen. Ich habe lange überlegt, die typische Küche bei uns ist nicht besonders gesund. Daher habe ich ein Rezept gewählt, dass mich an meine Oma und meinen Opa erinnert und dieses etwas abgewandelt.
Apfelradl gab es öfter, wenn wir bei ihnen zu Besuch waren. Ich kann mich noch gut erinnern wie ich und mein Bruder Oma und Opa beim Kochen halfen. Beim Essen  stand dann immer ein Topf in der Mitte vom Tisch und jeder nahm sich soviel er wollte. Apfelradl isst man bei uns normal als Hauptspeise, oder als Nachtisch. Es schmeckt auch besonders gut mit Vanille Eis.



Zutaten für 3-4 Personen

1,5kg Äpfel
100g Dinkelmehl
50g Vollkornmehl
250ml Milch (ich habe 125ml Milch, 125ml Wasser genommen)
1 Ei
etwas Backpulver
Zimt, Kardamom, Muskat


Zubereitung:

Alle Zutaten (außer der Äpfel) zu einem glatten Teig verrühren.
Die Äpfel schälen, das Kernhaus entfernen und in ca 0,5-1cm dicke Scheiben schneiden.
Die Apfelscheiben in den Teig tauchen und ein einer Pfanne in etwas Öl braten.
Die fertigen Apfelradl in einem Topf schichten, zwischen jede Schicht etwas Zucker streuen.



I've been wondering whether it is also worth blogging in English. For this reason i checkt my statistics. I am very pleased that I have received the second highest number of likes from Uk. The readers of my blog are the USA, UK, Canada and Ireland in positions 3-6 * happy *.

For this reason, I want to introduce you a (for me) typically Austrian dish. I have collected some ideas but the austrian cuisine isn't very healthy at all. Therefore, I chose a recipe that reminds me of my grandma and my grandpa and I slightly modified it.
We often ate "Apfelradl" when we were visiting them. I can still remember me and my brother helped grandma and grandpa cooking. "Apfelradl" were always served a pot in the middle of the table and everybody took as much as he wanted. "Apfelradl" you normaly eat as main course or dessert. It tastes especially good with vanilla ice cream.


Ingredients for 3-4 servings

1.5 kg apples
100g spelled flour
50g wholemeal flour
250ml milk (I used 125ml milk 125ml water taken)
1 Egg
some baking soda
Cinnamon, cardamom, nutmeg

Preparation:

Stir all the ingredients (except the apples) to a smooth dough.
Peel the apples, remove the core and cut them into approximately 0.5-1cm thick slices.
Dip the apple slices in the dough and fry them in a little oil in a pan.
Put the finished "Apfelradl" in a pot layers, sprinkle some sugar between each layer.

Selbstgemachtes Müsli / Homemade Granola

Viele meiner Freunde essen Müsli zum Frühstück. Die meisten nehmen die fertigen Müsli Mischungen aus dem Supermarkt. Das ist natürlich sehr praktisch, man sollte aber einiges Beachten. Diese Fertigmischungen haben meistens extrem viel Zucker und Fett und sind darum gar nicht gesund. Schaut euch mal die Zutaten Liste eures Müslis an. Maltodextrin, Gerstenmalzextrakt oder Glukose sind auch andere Begriffe für Zucker. Die meisten Knuspermüsli werden zu Knupersmüsli, weil sie viel Fett zugesetzt haben. 
Ich habe gerade die meine letzte Packung Müsli ganz hinten aus dem Vorratsschrank heraus gekramt (Mindesthaltbarkeitsdatum: Sept. 2014... eigentlich hasse ich es Lebensmittel wegzuwerfen, aber in dem Fall muss es wohl sein). An zweiter Stelle der Zutatenliste steht schon Zucker, an vierter Stelle Rapsöl. Fünfte und Sechste Stelle sind Palmfett und Kokosfett. Das ergibt bei 100g Müsli fast 20g Fett und fast genau soviel Zucker. Nun ja...Gesund ist anders. Daher am besten selber machen. Das geht auch mega einfach und man weiß genau was enthalten ist. Ich habe vor kurzem Müsli für eine sehr gute Freundin zum Geburtstag gemacht. Ihr hat es geschmeckt :).




Zutaten:

Für dieses Rezept habe ich leider keine genauen Gewichtsangaben. Es kommt immer darauf an was euch schmeckt und wie viel ihr herstellen wollt.
ein Teil vom Müsli sollte Getreide sein: Haferflocken, Dinkelflocken, Roggenflocken (verwendet aber nur eine Sorte, da es sonst zu Blähungen kommen kann)
ein weitere Teil kann Pseudogetreide sein: Amarath, Buchweizen, Hanf, Quinoa

ein weitere Teil können Nüsse oder Samen aller Art sein: Walnüsse, Cashew, Haselnüsse, Erdnüsse, Kürbiskerne, Sonnenblumenkerne, Pinienkerne, Hanfsamen, Leinsamen...
ein weitere Teil können Trockenfrüchte sein (hier aber wieder aufpassen! Die sind auch meist gesüßt oder haben Fett zugesetzt)
dann baucht ihr noch Gewürze: Zimt, Vanille, Kardamom, Muskat,...
und etwas Pflanzenöl (bei 250g Müsli ca 1TL) 

Für Lisas Geburtstagsmüsli habe ich folgendes verwendet: Dinkelflocken, gepufften Amaranth, Buchweizenschrot, Kürbiskerne, Cashewnüsse, Walnüsse, Leinsamen, Hanfsamen und Cranberries verwendet. Gewürz habe ich alles mit Zimt, Kardamom und Muskatnuss. 


Zubereitung:

Alle Zutaten zusammen mischen, mit etwas Öl mischen und auf einem Backblech verteilen. bei 180° ca 20-30min. goldbraun rösten.
Wer mag kann nach dem Rösten und Auskühlen auch noch Schokostückchen dazumischen. 





Many of my friends eat cereal for breakfast. Most take the customize muesli mixes from the supermarket. This is of course very convenient, but you should pay attention: These mixes are usually extremely high in sugar and fat and not health at all. Check ou the list of ingredients of your muesli. Maltodextrin, barley malt extract or glucose are also other names for sugars. Most crunchy muesli become crunchy because they contain a lot of fat.

I just looked for  my last pack of cereal hidden in the back of the pantry (expiration date: Sept. 2014 ... I really hate throwing away food, but in this case i think i have to). Second place in the list of ingredients is already sugar, ranked fourth rapeseed oil. Fifth and sixth place are palm oil and coconut oil. This means in 100g cereal you almost have 20g of fat and almost as much sugar. Well ... not healthy at all. Therefore make your homemade granola. This is very easy and you know exactly what is included. I have made some for the birthday of a very good friend recently. She enjoyed it :).


Ingredients:

For this recipe I do not have  exact weight disclosures. It all depends on what you liked and how much you want to produce.
one part of the cereal may be grain: e.g. oats, spelled flakes, rye flakes (but used only one type, as this can lead to bloating otherwise)
one further part may be pseudocereal: e.g. amaranth, buckwheat, hemp, quinoa
A further part may be nuts or seeds: walnuts, cashews, hazelnuts, peanuts, pumpkin seeds, sunflower seeds, pine nuts, hemp seeds, flax seeds ...
a further part may be dried fruit (but watch out! dried fruits usually have added sweetened or fat)
last you need spices: cinnamon, vanilla, cardamom, nutmeg, ...
and some plant oil (250g cereal at about 1 teaspoon)


For Lisa's birthday granola I used: Spelt flakes, puffed amaranth, buckwheat groats, pumpkin seeds, cashews, walnuts, flax seeds, hemp seeds and cranberries used. Spice I have everything with cinnamon, cardamom and nutmeg.


Preparation:

Mix all ingredients together, add a little oil and place on a baking tray. Roast it in your oven at 180 ° about 20-30min. .

If you like, you can add chocolate chips  after roasting and cooling.

Leichte Sommerpasta Sauce / Skinny Summer Pasta Sauce

Bald ist es wieder so weit, der Sommer kommt. Wenn es heiß ist, dann hat man oft nicht die lust etwas schweres zu Essen. Mein Freund liebt aber cremige Saucen auf seinen Nudeln. Aus diesem Grund habe ich mir diese leichten Sommernudeln mit frischem Gemüse ausgedacht. Uns hat es geschmeckt.


Zutaten für die Sauce für 2 Portionen:

1/2 Aubergine
1/2 Brokkoli
1/2 gelbe Paprika
1/2 rote Paprika
1 Tomate
1 Knoblauchzehe
frischer Rosmarin
frisches Basilikum
Salz, Pfeffer

1 TL Butter
2 EL (gutenfreies) Mehl 
1 1/2 Tassen Milch (für die vegane Version natürlich Soja)
1/2 Tasse Wasser
1/2 Tasse Parmesan
Muskat, Salz, Pfeffer

Zubereitung:

Nudeln eurer Wahl kochen.
Den Brokkoli in leicht gesalzenem Wasser kochen. Die Aubergine, Paprika, den Knoblauch, Romarin klein schneiden und in einer Pfanne anbraten. Vor dem Servieren die klein geschnittene Tomate und den frischen Basilikum noch untermischen.
In einem Topf die Butter schmelzen, das Mehl dazu geben und kurz anrösten lassen und mit Milch und Wasser aufgießen. Die Sauce unter ständigem umrühren kurz kochen lassen, bis sie bindet. Den geriebenen Parmesan unterrühren, mit Salz, Pfeffer, Muskat würzen. 
Auf die gekochten Nudeln die Sauce anrichten und das Gemüse darauf verteilen.
Wer mag kann natürlich auch noch Hühnerfleisch anbraten und untermischen. 



Soon summer is coming. When it is hot, I'm not in the mood to eat heavy. My boyfriend loves creamy sauces with his noodles. For this reason, I came up with this light summer pasta with fresh vegetables. We enjoyed it.

Ingredients for the sauce for 2 servings:

1/2 eggplant
1/2 broccoli
1/2 yellow bell pepper
1/2 red bell pepper
1 tomato
1 clove of garlic
fresh rosemary
fresh basil
Salt, Pepper

1 tsp butter
2 tbsp (glutenfree) flour
1 1/2 cups milk (for a vegan version: soy)
1/2 cup water
1/2 cup Parmesan (omit for vegan version)
Nutmeg, salt, pepper

Preparation:

Cook the pasta of your choice.
Cook the broccoli in lightly salted water. Chop the eggplant, peppers, garlic, rosemary  and fry in a pan. Mix the chopped tomato and fresh basil before serving.
In a saucepan, melt the butter, add the flour, and let it fry briefly and pour the milk and water. Boil the sauce briefly with constant stirring until it binds. Stir in the grated Parmesan cheese, season with salt, pepper, nutmeg.
Serve the cooked pasta with the sauce and spread the vegetables on it.
If you like you can also add chicken.

Rote Bete Carpacchio / Beetroot Carpaccio

Eigentlich dachte ich, dass ich rote Bete (bei uns "Rohnen") eigentlich nicht mag. ABER man soll ja alles öfter kosten da Geschmack trainierbar ist (so habe ich mir das Oliven Mögen gelernt ;) ). Ich muss sagen, ich revidiere meine vorherige Meinung. Ab jetzt mag ich Rote Bete. Überhaupt die Kombination mit Feta hat mich überzeugt. Dieses Gericht kann ich mir auch super als Vorspeise vorstellen.

Zutaten:

gekochte rote Bete
Feldsalat
Frühlingszwiebel
Feta
Walnüsse

Dressing:
1EL Zitrone
1/2 EL Olivenöl
Salz
Pfeffer

Zubereitung:

Die gekochte rote Bete in dünne Scheiben schneiden und auf einem Teller verteilen. Mit dem Feldsalat, Feta, Frühlingszwiebeln und Walnüssen garnieren.
Für das Dressing einfach alle Zutaten zusammen mischen und über der rote Bete verteilen.

Warum sollte man rote Bete essen?

Auch rote Bete gehören zum sogenannten "super food". Sie haben viele Nährstoffe und aufgrund ihres hohen Wasseranteils (ca. 90%) sehr wenig Kalorien.

Actually, I thought I do not like beetroot. BUT it is supposed to try more because everybody has a trainable taste (I've learned myself liking olives;)).  Now I revise my previous opinion. From now on I like beetroot. In general, the combination with feta convinced me. This dish I can also imagine as a great appetizer.

Ingredients:

cooked beetroot
lamb's lettuce
spring nion
feta
walnuts

Dressing:
1 tablespoon lemon
1/2 tablespoon olive oil
salt
pepper

Preparation:

Cut the cooked beets into thin slices and place on a plate. Garnish with lettuce, feta cheese, spring onions and walnuts.
For the dressing simply mix all ingredients together and spread over the beetroot.

Why should you eat beetroot?

Also beetroot belong to the so-called "super food". They have many nutrients and because of their high water content (about 90%) is very low in calories.
They are also rich in minerals (such as phosphorus, potassium, calcium, magnesium, folic acid and iron) and vitamins (group C and B)

Bärlauch-Feta-Muffin / Wild garlic-Feta-Muffin

Zusammen mit Freunden kochen ist etwas was mir total großen Spaß macht und was ich auch regelmäßig mache.
In diesem Blogpost möchte ich euch Katja vorstellen: Katja ist eine der wichtigsten Personen in meinem Leben. Sie ist meine beste Freundin, Arbeitskollegin, Studienkollegin, Sportpartnerin, Seelentrösterin, Teampartnerin... Es gibt Wochen, da sehen wir uns jeden Tag in der Uni/Arbeit oder beim Sport und dann verbringen wir noch zusätzlich unsere Freizeit zusammen. Es ist total komisch sie einmal mehr als 3 Tage nicht zu sehen. :) Ich wünsche jedem so eine gute Freundin zu haben!

Katja hat mir erzählt, dass in ihrem Garten momentan sehr viel Bärlauch wächst und sie den gar nicht alles verarbeiten kann. Frühling und Bärlauch gehört ja irgendwie zusammen. Also haben wir uns getroffen und ein neues Rezept ausprobiert, dass uns beide sehr begeistert hat.


Zutaten für 12 Muffin:

ca. 20 Blätter Bärlauch
180g Dinkelmehl
200g Polenta/Maisgries
2 TL Backpulver
1 TL Natron
Salz
90ml Olivenöl
300ml Buttermilch
2 Eier
50g Feta zur Garnierung

Feta-Fülle
100g Feta
50g Topfen/Quark (man kann auch Frischkäse verwenden)
1EL Milch
Salz, Pfeffer, Chili

Zubereitung:

Den Feta zerkleinern und mit den restlichen Zutaten für die Füllung vermischen.
Den Bärlauch waschen und klein schneiden.
Für die Muffins die den Bärlauch, das Dinkelmehl, Polenta, Backpulver, Natron und Salz vermischen. In einer extra Schüssel die Eier, Buttermilch und Olivenöl verquirlen. Mit einem Kochlöffel die trockenen Zutaten und die Ei-Buttermilch-Öl Mischung verrühren.
In die Muffin Form einen Klecks Teig geben, danach etwas von der  Feta-Topfen-Mischung, danach wieder Muffinteig.
Bei 180° Heißluft ca. 20 min backen.


Cooking together with friends is something I really enjoy and something I do regularly.
In this blog post I want to introduce Katja to you. Katja is one of the most important people in my life. She is my best friend, colleague, classmate, sports partner, comforter, teammate ... There are weeks when we see each other every day at the university/work or sports and we also spend our free time together.. It's really weird not to see her more than 3 days. :) I wish everyone to have such a good friend!
Katja told me in her garden lots of wild garlic grows and she can not handle all. Spring and wild garlic belongs together somehow. So we met and tried out a new recipe which we both enjoyed very much. 

Ingredients for 12 Muffin:

about 20 wild garlic leaves
180g spelled flour
200g polenta / cornmeal
2 tsp baking powder
1 tsp baking soda
salt
90ml olive oil
300ml buttermilk
2 eggs
50g feta cheese for garnish

Feta filling:
100g feta
50g curd (you can also use cream cheese)
1 tbsp milk
Salt, pepper, chili

Preparation:

Crush the Feta and mix with remaining ingredients for the filling.
Wash the wild garlic and chop.
For the muffins that mix the wild garlic, the spelled flour, polenta, baking powder, baking soda and salt. In a separate bowl, whisk together the eggs, buttermilk and olive oil. Stir the dry ingredience and the egg-oil-buttermilk mixture with a wooden spoon.
Put it into the muffin tin a dollop of dough, then some of the feta-curd-mixture, then again muffin dough.
Bake at 180 ° hot air about 20 minutes.

Protein Pancakes

Ich kann mich erinnern, dass Frühstücken für mich gar nicht wichtig war. Ich hatte sogar fälschlicherweise das Gefühl ich könnte leicht Kalorien sparen, wenn ich in der früh nichts oder nur ganz wenig essen... naja... heute ist das unvorstellbar für mich. Frühstück ist meine Lieblingsmahlzeit geworden. Ich bin zwar immer noch nicht direkt nach dem Aufstehen etwas essen, daher nehme ich mir meistens etwas in die Uni oder die Arbeit mit (z.B. meine Oatmeal2go oder Overnight Oats), aber Frühstück MUSS sein. Besonders gerne habe ich aber die Morgen an denen ich zu Hause bin und mir Zeitlassen kann. Dann esse ich besonders gerne diese Pancakes. Sie sind eine gesunde Alternative zu normalen Pancakes und mein absolutes Lieblingsrezept.





Zutaten:

1 Eidotter
2 Eiweiß
1 Banane
1EL Proteinpulver (oder Mandelmehl oder ein anderes Mehl)
eine Brise Backpulver

Zubereitung: 

Die Zutaten einfach alle Zusammen mit einem Pürierstab oder Standmixer mixen. Schon ist der Teig fertig. Pro Pancake 2 EL vom Teig in eine nicht all zu heiße Pfanne geben und auf beiden Seiten goldbraun backen. Man kann in den Teig auch getrocknete Cranberries, Blaubeeren, Schokostücke,... mischen. Wie man mag :) Auf dem Foto habe ich die Pancakes mit einer geschnittenen Birne geschichtet und mit Kakao Nibs und Honig garniert.



I remember a time whe breakfast was not important for me. I even had mistakenly feel I could easily save calories when I don't eat in the morning or it only a little bit ... well ... now that's unimaginable to me. Breakfast has become my favorite meal. Although I still cannot eating right after getting up, so I usually take something with me to eat in the university or work (e.g. my Oatmeal2go or Overnight Oats), but breakfast is a MUST for me.  I love the mornings I spend at home and I have enough time. Then I especially like eating these pancakes. They are a healthy alternative to regular pancakes and my absolute favorite recipe.

Ingredients:

1 egg yolk
2 egg whites
1 banana
1 tablespoon of protein powder (or almond flour or other flour)
a little bit baking powder

Preparation:

Simply mix the ingredients simply all together with an immersion blender or blender. When the dough is ready give 2 tablespoons of dough into a not-too-hot pan and cook until golden brown on both sides. You can also add dried cranberries, blueberries, chocolate pieces,.. to the dough. Whatever you like :) For my breakfast I layered the pancakes with a sliced pear and topped with cocoa nibs and honey.

Frühstücks Pizza / Breakfast Pizza


Langsam kommt der Frühling und es gibt die ersten frischen Erdbeeren, Spargel usw. Ich liebe die Farben im Frühling. Es macht einfach viel mehr Spaß bunt zu essen. Aus diesem Grund habe ich mir heute morgen eine Frühstücks Pizza gemacht. Ich finde es eine total nette Idee und bring viel Farbe auf den Frühstückstisch. Wie immer schnell gemacht :) Heute hatte ich außerdem große Lust auf Vanille, daher habe ich für alles das Vanillepulver von Sonnentor verwendet. 



Zutaten für eine Pizza:

Für den Teig: 
1 Banane
ca. 40g feine Haferflocken
1 Prise Backpulver
etwas Vaniellepulver

Zutaten Belag:
2EL Topfen/Quark
1EL Joghurt
etwas Honig
etwas Vanille
frisches Obst und dunkle Schoko Drops

Zubereitung:

Die Banane zermatschen, mit den Haferflocken, dem Backpulver und der Vanille mischen. Auf ein Backblech geben und eine Pizza-Form formen. Am besten relativ dünn, dann wird sie sogar knusprig. Bei 150° ca 20min Backen.
In der Zwischenzeit den Topfen/Quark, das Joghurt, den Honig und die Vanille vermischen. Die Pizza etwas auskühlen lassen, die Creme darauf verteilen und mit Obst belegen. 
Statt der Topfencreme kann man natürlich auch Nutella nehmen ;) als nicht so gesunde Variante.


Slowly spring is coming and there are the first fresh strawberries, asparagus, etc. I love the colors in the spring. It's a lot more fun to eat colorful. For this reason, I made a breakfast pizza this morning. I think it's a totally cute idea and it brings lots of color on the breakfast table. As always done quickly :) Today I also had a great desire to vanilla, so I used the vanilla powder of Sonnentor for everything.

Ingredients for pizza:

For the dough:
1 banana
40g fine oatmeal
1 breeze baking powder
someVaniellapowder

Ingredients covering:
2 tablespoon curd
1 tablespoon yogurt
some honey
some vanilla
fresh fruit and dark chocolate chips

Preparation:

Mix the mashed banana with oatmeal, baking powder and vanilla. Place on a baking sheet and form a pizza shape. Do this relatively thin, then it becomes crispy. Put it in the oven for about 20min at 150°.
In the meantime, mix the curd, yogurt, honey and vanilla.  Leave the Pizza to cool afterwards spread the cream on it and top with fruit.
Instead of a sweet cream you can also take Nutella :) as not so healthy variation.

Ovenbaked Oats

Mir ist einfach aufgefallen, dass ich viel mehr Energie habe, wenn ich etwas warmes Frühstücke. Wenn es schnell gehen muss, oder ich in der Uni/Arbeit bin, dann gibt es eig. meistens Oatmeal/Porridge. Wenn ich aber länger Zeit habe und zu Hause bin, dann mach ich mir Pancakes oder Ovenbaked Oats (ich kenne leider keine gute deutsche Übersetzung.) Wieder gibt es das Grundrezept und einige Abwandlungsmöglichkeiten unter den Fotos.


Schoko-Mocca: Grundmasse mit ca 90ml Milch zubereiten und noch 1 EL Instantkaffee und 1 TL ungesüßten Kakao und etwas Süßmittel untermischen
Chocolate-Mocca-Ovenbaked-Oats: Prepare the basic mix with about 90ml milk and add 1 tablespoon instant coffee, 1 tsp unsweetened cocoa and a little sweetener

Zutaten für eine Portion:

30g Haferflocken
70ml Milch nach Wahl
1 Banane
½ Tl  Backpulver
(wer mag etwas Süßmittel)

Zubereitung:

Haferflocken in Milch ca. 10min. einweichen lassen. Anschließend mit der zermatschten Banane und Backpulver mischen. Bei 200° ca 25min im Backofen backen lassen. 

Für diese Variation habe ich etwas Nutella und Erdnussbutter in die Grundmasse gemischt. Manche Tag müssen einfach mit Nutella starten :)
For this variation, I added Nutella and peanut butter in the basic mix. Some day simply have to start with Nutella :)

I leaned about myself that I have much more energy when I have a warm breakfast. If time is short, or I am at working or at university, then I normally have Oatmeal/Porridge for breakfast. But if I had more time and am at home, I'm making pancakes or Ovenbaked Oats. Again, there is the basic recipe and some possible modifications under the photos.

Ingredients for one serving:

30g  oatmeal
70ml milk of choice
1 banana
½ teaspoon of baking soda
(if you like a little sweetener)

Preparation:

Soak the oatmeal in milk for about 10 minutes. Mix the oatmeal with the mashed banana and the baking soda. Bake in the oven at 200 degrees about 25 minutes.

Exotisches Ovenbaked Oats: Für die Grundmasse habe ich Kokosmilch verwendet und Mango-Maracuja-Püree gemischt. Dazu gab es noch frische Kiwi und Kokoschips.
Exotic Ovenbaked Oats: I used coconut milk for the basic mix and added mango-passionsfruit-puree. I topped everything with fresh kiwi and dried coconut.


Himbeer Schoko Ovenbaked Oats: in die Grundmasse ein bisschen Himbeerpüree mischen. Die vegane Schokosauce habe ich selber gemacht: einfach 1 TL Kokosöl mit etwas ungesüßten Kakao mischen und alles zusammen backen
Raspberry Chocolate ovenbaked Oats: Mix a bit of raspberry puree into the base. The vegan chocolate sauce is made by myself: just mix 1 teespoon coconut oil with unsweetened cocoa and baking something all together


Apfelkuchen Ovenbaked Oats: in die Grundmasse einen halben geriebenen Apfel und (wer mag) Rosinen mischen. Würzen mit Aladins Kaffeegewürz von Sonnentor, oder Zimt und Kardamom.
Oven Baked Apple Pie Oats: add to the basic mix 1/2 grated apple and (if you like) raisins. Season with Aladdin coffee spice of Sonnentor, or cinnamon and cardamom.

Hummus

Hummus gibt es inzwischen fast überall zu kaufen, aber selbst gemacht schmeckt es noch immer am besten. Ursprünglich kommt Humus aus der arabischen/türkischen Küche und schmeckt wirklich supergut. Man muss die intensiven Gewürze allerdings mögen. Die Zubereitung ist total einfach. Ich esse Hummus total gern einfach als Dipp zu Gemüse oder als Brotaufstrich mit Falafeln oder manchmal auch einfach so. ;)

Zutaten:

1 Dose Kichererbsen (ca 250g)
2 Knoblauchzehen
2 EL Sesampaste (Tahini)
4 EL Wasser
2 TL Zitronensaft
1/2 TL Kreuzkümmel (Cumin)
Salz

Zubereitung:

Einfach alle Zutaten miteinander pürieren.


Warum sollte man Kichererbsen essen?

Schon eine Portion gekochter Kichererbsen (ca. 165g) deckt: 
70% des tägl. Folsäurebedarfs
65% des tägl. Kupferbedarfs
50% des tägl. Ballaststoffbedarfs
25% des tägl. Eisenbedarfs
20% des tägl. Zinkbededarfs

Kichererbsen haben einen niedrigen glykämischen Index (GI) und gemäßigte Kalorienmenge. Sie sind gleichzeitig sehr sättigend und vor allem für Sportler, Vegetarier und Veganer eine super Proteinquelle.

You can buy Hummus almost everywhere, but homemade is always the best. Originally humus comes from the arabic / turkish cuisine and tastes really good.  But you have to like the intense spices. The preparation is very simple. I eat hummus simply as a dip for vegetables or as a spread or with falafel or sometimes alone. ;)

Ingredients:

1 can of chickpeas (ca. 250g)
2 cloves of garlic
2 tablespoons sesame paste (tahini)
4 tablespoons water
2 teaspoon lemon juice
1/2 teaspoon cumin (cumin)
salt

Preparation:

Simply puree all ingredients together.


Why should you eat chickpeas?

Already a serving of cooked chickpeas (about 165 g) covers:
70% of the daily Folic acid needs
65% of the daily Copper needs
50% of the daily Fiber needs
25% of the daily Iron needs
20% of the daily Zinc needs
Chickpeas have a low glycemic index (GI) and moderate amount of calories. They are also very filling and especially for athletes, vegetarians and vegans a great source of protein.

In addition, chickpeas have a positive effect on the digestion, they act as antioxidants and have a positive effect on the cardiovascular system.
