Erdnussbutter-Banane-Eis / Peanutbutter-banana-ice cream

Da ich immer vor dem Frühstück ins Fitness Studio gehe, habe ich hinterher immer RIIIIIESEN hunger. Dieses Rezept ist ruck zuck fertig und liefert viele Proteine. Ein kleines schnelles Rezept.


Zutaten für eine Portion:

1,5 gefrorene Bananen
50g Griechischer Joghurt
2 EL Erdnussbutter
Dunkle Schokodrops

Zubereitung:

Alle Zutaten miteinander pürieren und nochmal für ca 30 min in den Gefrierschrank stellen.


Because I always go to the gym before breakfast, I'm almost starving afterwards. This recipe is a quick recipe which contains many proteins. 

Ingrediens for 1 serving:

1,5 frozen bananas
50g greek yoghurt
2 tbsp peanut butter
dark chocolate drops

Preparation:

Blend all the ingredients and put it back in de freezer for about 30 minutes.

Vanille Mousse / Vanilla Mousse

Auch Nachspeisen können relativ gesund sein. Man muss sie nur manchmal etwas abwandeln. Ich liebe ja süße Speisen. Diese Vanille Mousse mit frischen Beeren und Kirschen ist eine gute Wahl für eine sommerliche Nachspeise. Sie ist auch super einfach vegan zuzubereiten, da die Basis Seidentofu ist und keine Gelatine verwendet wird. Im Kühlschrank hält sie auch locker 3-4 Tage, man brauch wenig Zutaten und die Zubereitung dauert keine 5 Minuten. 


Zutaten:

400g Seidentofu
250ml Cremefine/Sahne/Sojasahne
2Pkg Vanillezucker
Vanillepulver
Süßmittel nach Wahl und Geschmack

Zubereitung:

Die Steif geschlagene Cremefine/Sahne/Sojasahne mit den restlichen Zutaten zu einer glatten Masse verrühren. Danach kann man sie eigentlich schon essen :) eine bessere Konsistenz bekommt sie aber, wenn man sie min. 2 Stunden im Kühlschrank stehen lässt. Ich habe sie sogar über nacht stehen lassen.


Even desserts can be relatively healthy. You just have to vary them  slightly. I love sweet foods. This vanilla mousse with fresh berries and cherries is a good choice for a summer dessert. It is also super easy to prepare vegan, because the base is silk tofu and no gelatin is used. You can keep it in the fridge for 3-4 days, you only need few ingredients and the preparation takes less than 5 minutes.

Ingredients:

400g silk tofu
250ml Cremefine / whipped cream / whipped soy cream
2Pkg vanilla sugar
vanilla powder
Sweetener of your choice and taste

Preparation:

Mix the whipped creamfine / cream / soy cream with remaining ingredients until smooth. After that, it is actually already eat :) but it gets better consistency when you put it into the fridge for at least 2 hours. I let it stand overnight.

Vietnamesische Sommer Rollen / Vietnamese summer rolls

Ein neues Rezept für die Kategorie "Kochen mit Freunden". Lange haben wir überlegt: Sollen wir irgendwo etwas Essen gehen, wenn ja wohin? Muss man reservieren? Wann treffen wir uns? ...
Die einfachere Lösung: Gemeinsames Kochen zu Hause.
Wir, das sind in diesem Fall Katja, Victoria und ich.
Gemeinsames Kochen ist etwas, dass wir seit Beginn des Studiums immer wieder einmal machen. Bei uns geht es momentan in die heiße Phase, sprich die Abschlussprüfungen rücken immer näher. Den Anfang von uns macht Victoria. Heute haben wir ihre Master-Präsentation geübt, kritisiert, aber vor allem gelobt. Sie hat es wirklich toll gemacht und wird die Prüfung natürlich mit bravour meistern. Es war ein wirklich schöner Nachmittag/Abend.


Für die Reisrollen braucht ihr:

Reispapier (das gibt es im Asiamarkt)
und Füllungen nach Wahl, für uns hieß das
Hühnerfleisch
Räucherlachs
Avocado
Paprika
Karotten
Rucola
Gurke

Zubereitung:

Füllen könnt ihr die Rollen natürlich wie ihr wollt, natürlich leicht vegetarisch, vegan oder glutenfrei.
Einen Teil vom Fleisch haben wir mit Curry, den anderen mit Tandori Gewürz gewürzt und gebraten. Die restlichen Zutaten haben wir in dünne Streifen geschnitten. Das Riespapier wird kurz in warmes Wasser gelegt, bis es elastisch wird. Dann einfach die Reisblätter füllen und wickeln (Anleitung unter einem der Fotos).
Die fertigen Sommerrollen kann man übrigends auch gut vorbereiten und am nächsten Tag zur Arbeit/Uni mitnehmen.

Dipp:

Für den Dip haben wir:
Joghurt,
Ingwer,
Knoblauch,
Sojasauce und 
süße Sojasauce zusammengemischt.

A new recipe for the category "Cooking with Friends". Always the same discussion: Shall we go go out to eat something, and if so where should we go? Do we have to reserve a table? When do we meeting? ...
The simpler solution: Cooking together at home.
We, that is in this case, Katja, Victoria and me.
Cooking together is something that we do every now and then since the beginning of the study. Currently it is the  final phase, means the final exams are approaching. Victoria is doing the first presentation. Today we practiced her master presentation, criticized but especially compliment her. She made it really great and she will do her finals with bravura. It was a really nice afternoon / evening.


For the rice rolls you need:

Rice paper (which you can buy at the Asia supermarket)
and fillings of your choice, for us that meant
chicken
smoked salmon
avocado
paprika
carrots
rocket salad
cucumber

Preparation:

You can fill the roles  as you want, of course, easy vegetarian, vegan or gluten-free.
A portion of the chicken we seasoned with Curry, the other with with Tandori-spice. Cut the remaining ingredients into thin strips. Put the rice paper into hot water until it is elastic. Then just fill in the rice leaves and wrap them (manual under one of the photos).
The finished summer rolls can a day before and take the next day to work / university.

Dipp:

For the dip, we used:
yogurt,
ginger,
garlic,
Soy sauce and
sweet soy sauce mixed together.

Gesunde Pancakes / Healthy Pancakes

Heute stelle ich euch eine weitere Version für gesunde Pancakes vor. Auch diese sind voller Proteine, aber im Gegensatz zu meinen letzten kommen sie ohne Proteinpulver aus. Sie sind super fluffig und ein perfekt Frühstück oder ein perfekter Nachtisch. In diesem Fall habe ich die Hälfte des Teigs normal gemacht, in die zweite Hälfte habe ich Blaubeeren gemischt. =)
Viel Spaß beim Nachmachen.


Zutaten für eine Portion:

20g Vollkornmehl
1/2Tl Backpulver
100g Magertopfen / Magerquark
1 Ei
1/2 Banane

Zubereitung:

Die Banane zermatschen und mit den restlichen Zutaten zu einem Teig verarbeiten. Die Pancakes dann in etwas Öl (ich habe Kokosöl genommen) in der nicht zu heißen Pfanne auf beiden Seiten anbraten.



Today I present to you another version for healthy pancakes. These are high protein pancakes, but different to my last they come without protein powder. They are super fluffy and a perfect breakfast or a perfect dessert. In this case, I made half of the dough normal in the second half I mixed some blueberries. =)

Ingredients for one serving:

20g wholemeal flour
1/2 tsp. baking powder
100g low fat curd
1 egg
1/2 banana

Preparation:

Mash the banana and process with the remaining ingredients to a dough. Fry the pancakes in a little oil (I used coconut oil) in a medium hot pan on both sides.

leichtes klassisches Tiramisu / light classic Tiramisu

Ich bin ein absoluter Kaffee - Junky. Ohne Kaffee geht einfach gar nichts. Aus diesem Grund mach ich auch Tiramisu total gerne. Leider ist es meist eine sehr schwere Nachspeise. Naja... MEISTENS. Nicht bei mir :) Für den Sommer genau richtig. Ich zeige euch jetzt mein Rezept für ein klassisches Tiramisu, natürlich könnt ihr es auch ganz einfach abwandeln und zum Beispiel Zitronen-Tiramisu, Erdbeer-Tiramisu oder Apfel-Tiramisu daraus machen. Die Creme und Kekse bleiben gleich, statt Kaffe nimmt man einfach eine andere Flüssigkeit und wer mag kann noch eine Schicht Obst dazwischen legen.
Da es nicht mit Mascarpone gemacht wird hat es auch DEUTLICH weniger Kalorien. Außerdem kann man es auch ganz einfach vegan zubereiten.


Für ca 10 Portionen:

200g Eierbiskotten/Löffelbiskuit
250ml kalter Kaffee
400g Seidentofu
250ml Cremefine (alternativ kann man Soja Sahne, oder Sahne,... nehmen)
2-3 Tropfen Vanillearoma
5EL Amaretto (kann man weglassen)
Süßmittel nach Wahl und Geschmack
ungesüßter Kakao zum Bestreuen

Zubereitung:

Die steif geschlagene Cremefine mit dem Seidentofu, Vanillearoma, Amaretto und Süßmittel zu einer glatten Creme verrühren.
Die Biskotten in eine Form schichten, mit dem Kaffee beträufeln, danach eine Schicht Creme darauf verteilen, wieder eine Schicht Biskotten und eine Schicht Creme. Oben drauf mit Kakao bestreuen.


I completely coffee addicted. Nothing works without coffee. For this reason, I am also a big Tiramisu fan. Unfortunately Tiramisu is usually a very heavy dessert. Well ... usually. Not with me :) This recipe is perfect for summer. Now i'll show you my recipe for a classic Tiramisu. You can also easily modify it of course. For example make a Lemon Tiramisu, Strawberry tiramisu or apple tiramisu. The cream and cookies stay the same, instead of coffee you just use another liquid and maybe put a layer of fruit in between.
Since it is not made with mascarpone, it has also less calories. In addition, you can easily prepare it vegan.

For about 10 servings:

200g Lady Fingers
250ml cold coffee
400g silken tofu
250ml Cremefine (alternatively you can use soy cream, or cream,...)
2-3 drops of vanilla flavoring
5EL Amaretto (may be omitted)
Sweetener of your choice and taste
unsweetened cocoa for sprinkling

Preparation:

Prepare a smooth cream out of the whipped cream/cremefine, the silken tofu, vanilla, amaretto and sweetener.
Layer the ladyfingers into a mold, sprinkle with the coffee, then spread a layer of cream on it, again a layer lady fingers and a layer of cream. On top sprinkle with cocoa.

Pizza mit Blumenkohlboden /Pizza with califlower crust

Ich habe auf diversen Seiten und Blogs über Blumenkohl-Pizza gelesen. Nun ja, ich mag Blumenkohl und liebe Pizza, also warum nicht kombinieren, noch dazu wenn es gesund ist? =) 
Kurzes Fazit: Gesagt, getan, begeistert! :)
Das Rezept habe ich inzwischen etwas abgewandelt, es schmeckt wirklich sehr gut und ist sehr sättigend. Durch die Zubereitungsart ist es low carb, vegetarisch und gluten frei.



Zutaten für den Pizza"teig" für eine Pizza:
1/2 mittlerer Blumenkohl
1 Ei
1/2 Tasse Parmesan
70g Mozzarella
1 Knoblauchzehe
Oregano, Salz, Pfeffer

Belag nach Wahl :)

Zubereitung:
Der Blumenkohl muss zuerst zerkleinert werden. Dazu kann man eine Küchenmaschine, einen Mixer oder eine Käsereibe verwenden. Er schaut dann etwas wie Grieß aus. Die Masse 5min (ohne Wasser) in die Mikrowelle geben, anschließend auskühlen lassen. Den gegarten Blumenkohl auf ein Tuch geben und fest ausdrücken, dass möglichst viel Wasser herauskommt. Mit dem Ei, dem geriebenen Parmesan, Mozarella, Knoblauch und den Gewürzen vermischen. Die Masse auf einem Bachblech in Pizzaform bringen und bei 180°ca 15min vorbacken (bis er leicht braun wird). Dann Belegen und zu Ende backen.
Ich habe meine Pizza mit Tomatensauce, Schinken, Paprika, Pilzen, Zwiebel, Mozzarella und Oregano belegt. 



I read on various websites and blogs about cauliflower pizza. Well, I like cauliflower and love pizza, so why not combine them, moreover when it is very healthy at all? =)
Conclusion: No sooner said than done, thrilled! :)
I slightly modified the recipe, it tastes really good and is very filling. By way of preparation it is low carb, vegetarian and gluten-free.

Ingredients for the pizza "dough" for a pizza:
1/2 medium cauliflower
1 Egg
1/2 cup Parmesan
70g mozzarella
1 clove garlic
Oregano, salt, pepper

Topping of your choice :)

Preparation:
The cauliflower must be chopped first. For this purpose one can use a food processor, a blender or a cheese grater. Then it looks a bit like semolina. Put the mixture  5min (without water) in the microwave, then leave to cool. Put the cooked cauliflower on a cloth and squeeze firmly that water comes out. Mix it with the egg, the grated Parmesan, mozzarella, garlic and spices. Put the mixture on a baking tray and bring it into pizza shape. prebake at 180 ° about 15 minutes (until it is light brown). Then add the topping and bake it till finish.
I topped my pizza with tomato sauce, ham, peppers, mushrooms, onions, mozzarella and oregano.
