gebratener Blumenkohlreis / fried califlower rice

Heute hatte ich einen anstrengenden Tag in der Arbeit, zur Entspannung wollte ich ein neues Rezept ausprobieren. Dass das Rezept aber so gut klappt und SOOO super schmeckt habe ich nicht zu hoffen gewagt :) Sogar mein Freund, der kein allzu großer Blumenkohl ist war begeistert! Also dieses Gericht wird es in Zukunft sicher öfter geben und ich werde es sicher auch in die Arbeit mitnehmen. Als UNBEDINGT ausprobieren!!!!!!! 


Zutaten:

1 Blumenkohl
1/2 Zwiebel
1/2 gelbe Paprika
1/2 grüne Paprika
1/2 rote Paprika
2 Karotten
1 Knoblauchzehe
100g Erbsen
2 Eier
5 TL Sojasauce
1 TL süße Sojasauce
1/2 TL Essig
Salz

Zubereitung:

Den Blumenkohl mit einer Küchenmaschine, einem Mixer oder der Käsereibe zerkleinern bis er wie Gries/Reis ausschaut. 
Karotten, Paprika, Zwiebel und Knoblauch zerkleinern und in einer Pfanne mit den Erbsen braten. Den Blumenkohlreis dazu geben und mit braten. Mit Sojasauce, Essig und Salz würzen, die Eier verquirlen in die Pfanne geben und gut umrühren.
 



Today I had a hard day at work, to relax I wanted to try a new recipe. I have not dare to hope that the recipe was as good and worked and SOOO well! :) Even my boyfriend who is not a fan ofcauliflower was thrilled! So this dish will be definitely be prepared more often in the future and I will certainly take it to work to. So your REALLY have to try it!!!!!

Ingredients:

1 califlower
1/2 onion
1/2 yellow bell pepper
1/2 green bell pepper
1/2 red bell pepper
2 carrots
1 clove of garlic
100g peas
2 eggs
5 tbsp soy sauce
1 tbsp sweet soy sauce
1/2 tbsp vinegar
salt

Preparation:

Cut the califlower with a food processor, or a cheese grater and shred it until it looks like rice. Cut the carrots, peppers, onions and garlic into small pieces and fry everything with the peas in a pan. Add the califlower-rice and season with the soy sauces, vinegar and salt. Whisk the eggs, add them into the pan and stir well.

Kürbissalat / Pumpkinsalat

Langsam kommt der Herbst, ich kann es kaum erwarten. Der Herbst ist meine liebste Jahreszeit und es gibt endlich wieder Kürbis :) Die die meinen Blog schon länger lesen wissen sicher, dass ich Kürbis-Süchtig bin :) Aber Kürbis ist auch mega vielfältig. Hier ist ein Rezept, dass man super vorbereiten und in die Schule/Uni/Büro mitnehmen kann. Bei mir wird es das in Zukunft sicher oft geben.  


Zutaten für 2 Portionen:

600g Hokkaido Kürbis
100g Feta (für die vegane Version einfach weglassen oder ersetzen)
2 Frühlingszwiebel
10 Walnüsse
Salz, Rosmarin, Thymian, Mukatnuss
2 EL weißer Balsamico Essig

Zubereitung:

Den Hokkaido Kürbis in Würfel schneiden, mit Salz, Rosmarin, Thymian, Muskatnuss würzen und bei 180° im Ofen rösten, bis er weich ist (ca. 10Min), danach auskühlen lassen.
Feta, Frühlingszwiebel und Walnüsse schneiden, mit dem ausgekühlten Kürbis und dem Essig vermischen.

Natürlich kann man das Gericht aus gleich Essen, dann schmeckt es noch gut, wenn der Kürbis lauwarm ist.


Slowly autumn is coming, I can not wait for it. Autumn is my favorite season, and there are finally pumpkin :) If you are following my blog for some times you might know that i am addicted to pumpkins :) But pumpkin ARE amazing :) Here is a recipe perfect for preparing and bring to school / university / office. I will definitively prepare it a lot in autumn because it is easy, fast and healthy.

Ingredients for 2 servings:

600g Hokkaido
100g feta (for vegan variant simply omit or substitute)
2 spring onions
10 walnuts
Salt, rosemary, thyme, nutmeg
2 tbsp white balsamico

Preparation:

Cut the pumpkin into cubes, season with salt, rosemary, thyme, nutmeg and roast at 180 ° in the oven until it is soft (approx 10min) and allow to cool.
Cut the Feta, spring onion and walnuts,  mix with the cooled pumpkin and the vinegar.

If you like to enjoy your dish right away, have it while the pumpkin is lukewarm.



Pancakes mit Haferflocken / Oatmeal Pancakes

Ich liebe Sonntag an denen man Zeit hat lange und ausgiebig zu frühstücken. Ich habe schon lange keine Pancakes mehr gemacht, gestern hatte ich riesige Lust darauf. Gut, dass heute Sonntag ist, ich nichts vor hatte und von meinen Eltern frische Beeren und Feigen bekommen haben - das perfekte Topping :).
Ich hab wieder ein neues Rezept ausprobiert, geschmeckt haben sie super :) Dazu hab es Tonka - Joghurt.


Zutaten:

2 Eiklar
1 Eidotter
1 Banane
3 EL Haferflocken
1/4 TL Backpulver
1/4 TL Natron

Tonka-Joghurt
100 g Naturjoghurt
1/2 Tonkabohne
Süßmittel nach Wahl

Zubereitung:

Die Zutaten für die Pancakes zusammen mixen. Ich habe dazu meinen Smoothie Maker verwendet, das hat super geklappt. In etwas Kokossöl, bei geringer Hitze die Pancakes zubereiten. 
Für das Tonka-Joghurt habe ich etwas Tonkabohne in Naturjoghurt gerieben und etwas Süßmittel dazugegeben.



I love those Sunday where you have time to eat - no celebrate - breakfast. I haven't have Pancakes for a while but yesterday I really craved for it. Well, today is Sunday, I had nothing to do and I got some fresh berries and figs from my parents - the perfect topping :).
I tried a new recipe, it tasted great :) had my pancakes with Tonka - yogurt.

Ingredients:

2 egg whites
1 egg yolk
1 banana
3 tablespoons oatmeal
1/4 tsp baking powder
1/4 tsp baking soda

Tonka yogurt
100 g  plain yoghurt
1/2 tonka bean
Sweetener of choice

Preparation:

Mix the ingredients for the pancakes together. I used my smoothie maker, which worked great. Fry the pancakes in some coconut oil on a low heat.
For the Tonka yogurt I have rubbed some tonka in plain yogurt and added a little sweetener.
